Snap, crunch, and squirt is what my senses experience from biting into a fresh pea pod. They are amazing. I washed a bunch of Fat Moon pea pods last week for a quick snack before going out to dinner with friends. I think the kids (all under 5 years) were more excited and faster at consuming the pea pods than the adults. It was as though I put out a special treat – that’s what past experience and knowledge about how delicious fresh vegetables are can do for our kids!
Pea pods are an excellent source of vitamins A, C and K. They are also a good source of B vitamins (thiamin, riboflavin and niacin) and fiber. They have a mild flavor and are slightly sweet. They are best consumed within 1-2 days of harvest. Pea pod storage and preparation.
Fun Facts: Pea pods are one of the oldest crops in the world. They are also a legume, meaning that the plant produces pods containing edible, fleshy seeds.
Culinary Tip: Serve raw or cooked (usually steamed or stir-fried). Consume as a snack or add to a salad. When cooking, add at the end of cooking – they usually don’t need more than 2-3 minutes of cooking and are best when still crisp. If pea pods are overcooked they lose their flavor.
Add to green salad, pasta salad or crudités platter.
